Domaine Saint-Cyr is a fourteen-hectare biodynamic family domaine in the village of Saint-Aubin. Three generations, eight cuvées, one piece of land.

Wine made by a family. Not by a brand.
Three generations now work the same parcels. The same horse pulls the same plough through the same vines. The wines we sell today were begun by a grandfather who never met his grandchildren.
I.
Terroir
14 hectares of clay-limestone slope between Saint-Aubin and Puligny-Montrachet. Old vines: half are above forty years; the oldest, planted in 1957.
II.
Biodynamic
Demeter-certified since 2003. We work the soil with horse and hand, follow the lunar calendar, and produce our own compost from the estate herd.
III.
Patience
Wild yeasts. Long élevage in old oak — never new. Eighteen months in barrel, six in bottle, before a single cuvée leaves the cellar.
Au Chai
Eight cuvées. One philosophy.
We make our wine the way our grandfather did: indigenous yeasts, gentle pressing, long élevage in barrels we keep for fifteen years or more. No new oak, no fining, no filtration.
The wine should taste like the slope it came from. Nothing more, nothing less.
